I made a recipe the other day that called for a tiny bit of canned pumpkin.
So, basically there was almost a whole can left over.
I don't know about the rest of you there- but I become obsessed with not letting food like that pumpkin go to waste.
Even if it calls for extreme measures,
Like hiding it.
In things....
Things like healthier no bake cookies ( Pinned Here) and my kids favorite chocolate banana sour cream muffins.
Then, out of the last bit of pumpkin left in the can, this smoothie concoction was born.

Did you know that 1/2 cup of pumpkin contains 300% of your daily recommended dose of vitamin A? {I really didn't realize that until yesterday when I read the label on the can. I knew it was good for you, but not that good}
Not to mention it has a nice amount of fiber and other good for you stuff too.
So gobble up. Chug it down. Chug! Chug! Chug!
Like you're at some kind of college frat party.
When you're all done~ Slam that empty plastic smoothie cup on the counter, let out a girlie burp, and raise your arms in the air while hollering Yeah! I just did something good for ME! ME! ME!
You'll most likely be alone when you do this.
Probably a good thing.
Don't want people thinkin' you caught a bad case of the crazies.
{Skinny} Pumpkin Cheesecake Smoothie
- 1/2 Cup Almond Milk
- 1/4 Cup Low fat Cottage Cheese
- 1/2 Cup 100% Pumpkin Puree (chilled)
- 1/2 Tsp. Cinnamon
- 1 Packet Stevia in the Raw
- 1 Tsp. Honey (to taste)
Combine all ingredients in Bender. Blend until nice & smooth. Garnish with a sprinkle of cinnamon.
